A filling breakfast staple with minimal oil

2 medium Yukon Gold potatoes
100g White or Sweet Onions
100g Sweet Peppers, multicolored
2-3 cloves, Garlic
2 tsp Kosher Salt (or to taste)
1 tsp ground Black Pepper (or to taste)
1 tsp light oil (such as canola or grapeseed)
Hands on time: 15 minutes
Total cooking time: 55 minutes
Cut potatoes to desired size and thickness. Add to medium or large bowl and cover with water by at least one inch. Let sit for 10-15 minutes.
While potatoes are soaking, lightly sweat onions, peppers and garlic (with oil) in large (10-12 in.) pan.
Add potatoes, seasonings and soaking water.
Cover and braise over, stirring occasionally, for 20 minutes or until potatoes are tender and water has evaporated.
