“CHUCK FIL-A” TOFU SANDWICH
An Air Fried, cruelty-free version of a fast food favorite.

Serves 4
Ingredients:
1 cup pickle juice
1 cup plant mlk, divided
1 package organic firm, extra firm or super firm tofu
potato, corn or tapioca starch (or nutritional yeast)
Chickpea, AP, or Brown Rice flour
2 Tbsp ground flaxseeds
1 tsp powdered sugar
Salt, Pepper, garlic powder to taste
1tsp Turmeric (optional) for color
Spray oil
Directions:
Hands on time:15 minutes
Total Time: 4 hrs, 45 minutes
Freeze tofu for 2 hours, thaw, then press for one hour
Evenly slice pressed tofu into 1/2 inch thick slices
In large container, combine pickle juice and 1/2 cup plant mlk
Add tofu slices to mlk/juice mixture. Marinate for at least one hour.
While marinating, make breading station: add lightly seasoned starch to a shallow dish, ground flaxseeds and remaining mlk (for a flax egg mixture) to a second dish, and aggressively seasoned and sugared flour to a third dish
Bread tofu: coat marinated tofu in cornstarch, dip in flax egg, and toss in flour mixture until thoroughly covered.
Lightly spray one side of breaded tofu
Preheat Air Fryer to 400 degrees for five minutes.
Place tofu, in single layer, oil side down, in Air Fryer. Spray top side with oil
Air Fry at 400 degrees for 15 minutes.
Flip tofu slices and continue to AF at 400 degrees for another 15 minutes.
Add cooked slices to buns, top with a pickle and other desired condiments.
